Reimagining the classic, we take the melt-in-your-mouth, velvety texture of parfait and dare to pair it with the bold, umami depth of Japanese quail.

  • Spread it thick on toasted brioche or soft bread (the more, the better).
  • Torch the surface for a brûléed finish and that satisfying crack.

Plays well with: stone fruits, wattle-seed crackers, bush honey, burnt butter, chardonnay.
